Tai Snappers have a vibrant organe-y red color and delicately sweet flavor with a firm and flaky texture.

Tai Snapper (Pagrus auratus), Pink Sea Bream, Porgy 

A symbol of fortune and luck

Snapper belongs to the sea bream family and is New Zealand’s most iconic species. Discerning chefs around the world prize this fish for its colorful golden scales and speckled light blue spots. Furthermore, the flesh is light with a pinkish tinge, and cooks up white, with medium flake/texture. According to Japanese tradition, it is the symbol of fortune and is typically used as the centerpiece in celebratory feasts.

Our fisher people use long-lines from a daily fleet of boats to catch these snappers. New Zealand’s snapper fishery uses the Quota Management System which limits commercial catch to 6,357,300 tons which maintains healthy stock levels.
