Chilean Sea Bass (Dissostichus eleginoides), Patagonian Toothfish
Monterey Bay Aquarium Seafood Watch: Good Alternative.
By far, the largest sustainability concern for Chilean Sea Bass is traceability. To ensure the end consumer that Chilean Sea Bass is caught from a responsibly managed fishery, all of RHS’ Chilean Sea Bass is from Marine Stewardship Council (MSC) certified. These frozen portions are a premium product and its high-fat content keeps it moist while cooking and allows for that melt-in-your-mouth texture.
Despite its name, Chilean Sea Bass is neither a bass nor from Chile. It is a Patagonian Toothfish, caught in the southern Atlantic Ocean around Antarctica. Nevertheless, Chilean Sea Bass has grown quite popular in America over the past 15 years due to its exquisite taste, fat content, and texture.
The high-fat content makes it difficult to over-cook the fish, thus dry-heat cooking methods such as grilling, broiling, and sautéing are very effective. Once cooked, the meat falls off as large, moist flakes that melt right in your mouth. Chefs and connoisseurs agree that this fish is overall (cooks and tastes) exceptional.
As a 100% transparent and sustainable seafood supplier, Royal Hawaiian was one of the first seafood processors in the country to collaborate with the Monterey Bay Seafood Watch program to ensure that we only sell products from fisheries that are responsibly harvested or aquacultured.
