Kanpachi is a premier member of the Amberjack family, prized by Japanese itamae and top chefs everywhere. We love working with these Kanpachi because we know they were raised right and it shows in the quality every time. We cut the fillet from an average-sized 4-6 lb. whole Kanpachi.
