Albacore (hunnus alalunga)
Soft, Buttery, and Delicious
Albacore is one of the smallest members of the tuna family. If the Albacore were to continue with their migration and growth patterns they would end up in Hawaii where they are then called Tombo Ahi. Albacore’s raw fillets are soft and fall apart easily in large flakes but firm up upon cooking. Due to its mild, buttery, fatty flavor, albacore is a perfect and unique product for sashimi! It is also a popular fish for the Japanese cooking method called tataki.
Sustainability
This Albacore was caught in the South Pacific Ocean with trolling lines and was rated best choice by the Monterey Seafood Watch Program. The albacore population in the Pacific is healthy, and overfishing is a low concern. Also, there’s little to no bycatch in this fishery.
