Manila Clams (Venerupis philippinarum)
Sweet and meaty.
Manilla clams are known by many chefs for their meaty, firm texture, and sweet taste. These fresh bivalves are harvested in Washington and can be easily spotted by their attractive hard shells which have deep, wide bars of color over a finely ridged shell. Our Manilla clams are small, there are typically about 12-15 pc per pound and are around ½ to 1 inch in size. Making them perfect for pasta or just steamed with garlic butter and wine.
