This high level of natural fish oil making it very forgiving for chefs to work with. Since the skin is thick, it is also recommended to serve the fillets skin-on as it becomes crispy when seared. Since the texture of Black Cod is quite flaky, it isn’t recommended to grill this fish as the delicate texture can fall apart through the griddles.
