One of the market names for Black Cod is “Butterfish”. It is given this name to describe its amazing buttery flavor. It contains high levels of Omega-3 fatty acids (comparable to salmon) which are good for your health.
This high level of natural fish oil making it very forgiving for chefs to work with. Since the skin is thick, it is also recommended to serve the fillets skin-on as it becomes crispy when seared. Since the texture of Black Cod is quite flaky, it isn’t recommended to grill this fish as the delicate texture can fall apart through the griddles. Other than grilling, Black Cod is an extremely versatile fish and is assured to provide customers with a great tasting sustainable option.
