This wild King salmon was wild-caught by local fisheries and fisher people just off the coast of Northern California. Uniquely delicious & filled with nutrients like Omega-3’s, fresh local wild King salmon is both a wise and delicious choice. Wild King salmon has the highest fat content and most flavor compared to the other species of wild salmon (Coho, Chum, Sockeye, Pinks). In order to elicit optimal flavor from wild King salmon, it is always best practice to slightly undercook the king rather than to overcook it. For any cooking method, we recommend just under 10 minutes per inch of width.

Twice a year – in the fall and spring – different groups of wild King salmon make their annual run to swim back upstream to where they were born. The primary catching season for wild king salmon is during the spring and fall. During the season, California’s Department of Fish and Wildlife protects the population by permitting boats to fish only on certain days or weeks. Because of the uncertainty for when salmon is allowed to be caught, wild king salmon in the summer comes in sporadically and leaves our hands fast. This is a hot commodity and runs out quickly, so we ask customers not to pre-order this fish more than 2 days in advance.

Customer Empowerment.
In the past two decades, California’s Department of Fish and Wildlife (commonly known as fish and game) has adequately improved the population strength of our beloved California wild king salmon. Although the population strength has improved, the wild king salmon population is still fragile. For this reason, the main sustainability concerns for wild salmon are fishery management, catch method, and fish population health.

Royal Hawaiian Seafood is proud to promote our local fisher people who catch this salmon using the troll/pole method. The troll/pole catching method is akin to literally catching fish with a fishing pole – albeit a few variations for efficiency reasons. Compared to catching fish with enormous nets, using the troll/pole method lowers the risk of overfishing and is considered a responsible catch method.
