Tuna Tombo has a flavor and texture profile in between albacore and ahi tuna. Like albacore, tombo has a soft and buttery flesh, desirable attribute for dishes such as Crudo or confit. Its flesh varies from whitish-pink in smaller fish to deep pink in larger fish. Our primary supply of tombo is caught in Fiji using a long line

Tuna Tombo (Thunnus alalunga)

The word ‘tombo’ means ‘dragonfly’ in Hawaiian and describes the very long pectoral fins that the fish have. Tombo and albacore tuna are the same species of fish but albacore is caught in the pacific during the summertime whereas Tombo is caught year-round in tropical waters. We recommend pan searing or grilling this fish, leaving the center rare to avoid overcooking.

Traceability.

Fisher people on daily fleets use longlines to catch this tombo. We source our primary supply of Tombo from Fiji but we occasionally supplement this with Hawaiian fish. This fish is currently unranked by the Monterey Seafood Watch Program.
