This King salmon was wild-caught by fisheries and fisher people off the California Coast, near Pigeon Point. Uniquely delicious & filled with nutrients like Omega-3’s, fresh local wild King salmon is both a wise and delicious choice. Wild King salmon has the highest fat content and most flavor compared to the other species of wild salmon (Coho, Chum, Sockeye, Pinks). In order to elicit optimal flavor from wild King salmon, it is always best practice to slightly undercook the king rather than to overcook it. For any cooking method, we recommend just under 10 minutes per inch of width.
Twice a year – in the fall and spring – different groups of wild King salmon make their annual run to swim back upstream to where they were born. The primary catching season for wild king salmon is during the spring and fall. This is a hot commodity and runs out quickly, so we ask customers not to pre-order this fish more than 2 days in advance.
