The mission of Rappahannock Oyster Co. Is to resurrect the native Bay oyster and put it back on the map. Oyster aquaculture held the promise of repairing the Bay, as a single oyster filters 50 gallons of water a day and provides habitat for countless species. The oysters are grown in open water, right next to the wild oysters – the only difference being Rappahannock grows in cages so that come harvest time there’s no destruction of the fragile river bottom.
