This specialty product follows the traditional carpaccio recipe in which the octopus is tenderized, cooked, and pressed to log forms. It takes 3 lbs. of fresh octopus to produce 1 lb. of carpaccio. The carpaccio comes frozen but thaws easily and you only need to garnish and serve. Serve slices with your choice of salad, vegetables, and seasonings. It makes for a beautiful presentation with little to no effort.
The octopus is wild-caught from the crystal, mineral-rich waters of Spain and Portugal using pots and traps. It is then brought to southern Italy where the product is processed and packed by a family-owned butchery. This product received a yellow ranking from the Monterey Seafood Watch Program.
