Yellowtail Jack is a member of the Jack family and is characterized by the striking yellow line that runs through its body all the way up to the tail. Very similar to its natural cousin Kanpachi, this fish has a rich sweet flavor with a dense, meaty, fatty, and moist texture.
Fisher people catch this Yellowtail Jack off the Pacific coast ranging from Baja Mexico up to Monterey. They use a hand line method of fishing to minimize the environmental impact. Furthermore, it currently stands at a yellow (Good Alternative) rating by the Monterey Bay Aquarium Seafood Watch Program.
