Arctic Char (Salvelinus alpinus)
Arctic Char is a relatively fatty fish. It has a pronounced buttery rich flavor with a clean finish. Like salmon, the texture is firm with small tender moist flakes. Eating char is an intensely mouth-filling experience. This fish has all the pluses of salmon, without any of the minuses.
We source our Arctic char from the pristine icy snowmelt of the Northern Cascade Mountains. The char are only fed natural products and are raised without any chemicals or antibiotics. Farmed Arctic Char has the “Best Choice” recommendation by the Monterey Bay Aquarium Seafood Watch.
